‘The most easiest chicken curry I’ve ever made! Plus, yummy too!!’
Raise your hands up, if you’re a fan of ’em herbs, like me!! I love them all! No bias at all! Thyme, rosemary, parsley. And most of all, cilantro or coriander leaves! Growing up, my mother would garnish her wonderful biryanis and curries with those fragrant, chopped leaves..Today, I do that for a lot of my food preparations.
I came across this super-simple recipe on the website called ‘Vah Re Vah’!! (I like the name of the website! Very amusing!) And the chef who demonstrates is always so peppy and enthusiastic! Anyways, coming back to the recipe, it’s just a simple marination of the chicken, heating a heavy-bottomed pan with oil, adding the marinated chicken pieces, sautéing a little, putting on the lid, letting the chicken cook and that’s it!! There is no chopping of onions or tomatoes involved! No extra masalas! You’ll see from the steps just how simple this is. And there is a a very rich taste to this curry. It’s most definitely attributed by the inclusion of yogurt and cashew nuts in the marinade! The dish is perfect with any freshly made, hot Indian flatbread.
