Jalapeno and Cheddar Cheese Mini Muffins

‘Little explosions of spice and flavour!’

Last weekend, my husband and I had a few of our neighbours over for dinner. And I was seeking for a different and rather interesting appetizer… In comes these savory muffins!! My mini muffin pan never ceases to impress and surprise me! I have learnt over a short period of time that the ways with which a mini muffin pan can be used are limitless! Plus, I earnestly believe quality supercedes quantity! These mini muffins may be quite small but they are so soft and yummy! And needless to say, my neighbours and my husband could not get enough of these!

Did you know that in 1982, the jalapeno pepper was the very first capsicum to travel to space, when the astronaut Bill Lenoir brought it aboard the space shuttle Columbia? Amusing, isn’t it? Also, it is recommended that one shouldn’t drink water to escape the heat from eating jalapenos! This is because capsicums contain the compound known as capsaicin, which is freely soluble in alcohol and vegetable oils but not soluble in water. So when one drinks water after eating a jalapeno, the heat spreads in the mouth, possibly making the situation worse! The remedy is drinking cold milk or eating cheese, bread or white rice!
